A few years ago I found an amazing recipe for Tarragon Tuna Melts. The origin of this recipe is unknown. It is a torn magazine page in my recipe binder and it only states that Karen Tedesco of St. Louis sent it in to the mystery magazine in February of 2006. Thanks Karen of St. Louis, these tuna melts rock! I am going to share these; they are perfect easy, fast food with great taste from a can of tuna. We usually have most of the ingredients on hand so they are a favorite for our house.
Tarragon Tuna Melt Recipe
1/4 c. mayo
1/8 tsp ground black pepper
3tbs snipped fresh Italian parsley
12 oz can tuna drained & flaked
2tbsp fresh chives (I use dried sometimes, just adjust the measurement)
2 tsp dried tarragon
1 tsp finely shredded lemon peel
2 tsp lemon juice
1 tsp Dijon mustard
Plus:
Sourdough bread
tomato slices
thin sliced white cheddar cheese
Mix all ingredients together and grill on sourdough with tomato slices and cheese. MMMM.
So tuna melts were delic, the kids are in bed, my son seems to be feeling better and I think it's cocktail time. Cheers!
